I had a few days of vacation around the Thanksgiving holiday which was amazing. I always like to take the day off before a holiday so I don’t have to rush through all of my baking. This year I actually took the day after Thanksgiving off as well. This was a first for me. It certainly won’t be the last! It was so nice to be able to just enjoy the holiday without the dread of having to go right back to work the next day. Needless to say with all the time off, I did a lot of baking. I baked literally all day Wednesday. Which I didn’t mind at all! I enjoyed making personal sized desserts so much for Easter this year that I decided I would try that again for Thanksgiving since it’s all about the pie on Thanksgiving! It took me awhile to narrow down exactly what I wanted to make. Pecan pie was definitely on the list. This has been a favorite since the first year I made it. It really is an easy pie to throw together and tastes amazing with the addition of my favorite stout beer, Obsidian Stout, from Deschutes Brewery. Andy and I discovered this brewery while in Oregon for our wedding. They have delicious beer and it is now available almost everywhere. I also wanted to do a pumpkin pie but wanted something a bit different. I found this Pecan Streusel Pumpkin Pie. Total winner. Of course, I needed something lemony. To my rescue comes Martha Stewart as usual. Her Upside Down Lemon Meringue Pie is now one of my new favorites. It was so good! To round out all of that, I wanted something really different. A little more fun and playful. So I decided to mash up a few favorites to make S´mores Brownies. With a graham cracker base, brownie layer and topped off with a marshmallow meringue, you cannot go wrong with these! Since I was baking all day I didn’t really have a chance to snap some really good pictures of these, hopefully I will some day. And the poor pecan and pumpkin pies only got pictures on the way to dinner that day. I know, I’m terrible! I’m trying to get better at this while picture taking thing, I really am. As you can see I had a ton of fun with the torch that day as well! So now that we are done with that holiday, I’m in the calm before the storm. I’m trying to figure out desserts for the Christmas holiday and presents for everyone as well. Getting a bit of decorating done and enjoying the new fallen snow. It was so beautiful yesterday. We got about 2-4 inches of snow. Andy played with our new four-wheeler with a plow on it. I think he would have stayed out there all night moving snow all night!
