Sucked Into a Jet Engine
Catchy title, huh? I thought so too.
Today was D-day in the healthcare world. Or ICD10-day if you will. For those of you that work in healthcare, you will know exactly what I’m talking about. For those of you who don’t, well, you don’t want me to even try to explain it. Your head will explode. And I can’t have that on my conscience.
I will say that today is the day healthcare gets a bit more complicated. Let’s leave it at that. To alleviate some stress today for some of the caregivers I support, I baked. ‘Cuz that’s what I do.
Cupcakes = Happy People
And for the most part, people were happy. For a little while….
They were on a sugar high. And then they weren’t. I could have gone around shoving cupcakes down their throats every half hour but that seemed a bit too aggressive. I was happy that they were happy, even if it was short lived.
The cupcakes are Pumpkin Spice and to be honest, were a little blah. So I need to work on that before I unleash the recipe on the world. The buttercream on the other hand was PHENOMENAL! I may have gone into a sugar induced coma last night after eating it with a spoon. I recommend slathering this buttercream on everything. Seriously. I can’t think of one thing this wouldn’t be good on.
So, if you are in the market to make people walk around like sugar coma zombies for a little while, try this recipe out. I promise it won’t disappoint.
Maple Brown Sugar Buttercream
2 sticks butter, unsalted, room temperature
1/2 cup brown sugar, packed
1 1/2 tsp cinnamon
dash of nutmeg
3-4 cups powdered sugar
1 tsp vanilla extract
1 tsp maple flavoring (this is what I use)
2-3 Tbsp heavy cream
Beat butter in a stand mixer until pale and creamy. Add brown sugar, cinnamon and nutmeg and beat until light and fluffy. The longer you beat, the better. Add powdered sugar one cup at a time and beat till incorporated. Add vanilla and maple flavoring and beat till incorporated. Add enough heavy cream to bring the mixture to the consistency you like. Continue to beat mixture for 5-7 minutes on medium-high speed. Frost cooled cupcakes.
I garnished these babies with a dash of nutmeg and sprinkling of Demerara Sugar. Simple.
I had purchased the Maple Flavoring I used in the recipe from Spice Jungle. Last year I purchased the Vanilla Beans I use to make homemade vanilla from their “sister” company Beanilla and they got a customer for life. Everything I have purchased has been wonderful to bake/cook with. So when I got my order in the mail last night and smelled the Maple Flavoring, I HAD to bake with it immediately. I also purchased a 3 fold vanilla paste which is like the nectar of the Gods. Amazing.
