Rumchata Root Beer Float Cupcakes
This past weekend most of Wisconsin hunkered down for our first snowstorm of the year.The snow was supposed to start Saturday night and go on through Sunday. I had to get my haircut Saturday morning so I decided to get all my shopping done that day so I didn’t have to leave the house for anything on Sunday.
I stopped at Target and spent more than I should have. What is it with that store?? It is physically impossible to leave that store without spending half my paycheck. I picked up some really cute containers for my sweet Christmas gifts this year so that is a plus.
I also made a stop at Hobby Lobby. I’ve been in the market for some sort of basket or bin for my baking pans. I had them all stacked sitting on the shelf of my kitchen cart. They were taking up WAY too much room. I haven’t been able to find anything that I really liked so I decided to see what Hobby Lobby had for me. I looked at all of their baskets, bins and crates and didn’t see anything that I liked and would fit my pans. I happened to round the corner of an aisle about to leave and I saw more options. Particularly the metal basket/bin that I came home with. It has two little places on the back where I assume you would hang it on the wall, but I thought it would actually work quite well for corralling my pans. And if it didn’t work I would just return it.
To my surprise, it works perfectly! And it was half off!! Winning!
Sunday came and it snowed. All day. I did get quite a bit accomplished. Like two pans of venison lasagna for the freezer. I also got to try out a cupcake idea I had floating around my head for some time. I had purchased a bottle of root beer concentrate at the store awhile ago and then kind of forgot about it. I happened to have one bottle of Not Your Father’s Root Beer in the fridge. If you haven’t tried this stuff yet, go do it now. If you like root beer, this stuff is right up your alley. And let me tell you – add some vanilla ice cream for an “adult” root beer float and you will think you’ve died and gone to heaven. My idea was a root beer cupcake with a creamy ice cream like frosting. I had some cute little bottles of Rumchata in my possession as well. Another one of those, throw it in the cart for a rainy (snowy, in my case) day purchases. I’ve made Ermine Frosting or Boiled Milk Frosting for these but I wanted another layer of flavor. So instead of all milk, I used half milk and half Rumchata. Worked like a charm. I always love it when a plan comes together. I topped them with a root beer reduction which I kept eating so I’m surprised there was enough left to drizzle on the cupcakes.
The awesome part of working in a large hospital is that there is no shortage of taste-testers. Especially at 2 o’clock in the afternoon!
