Oreos

Enough said. Oreos are amazing. They are one of my favorite store bought cookies ever. A mere second place behind my all-time favorite Carousel Cookies. I went to college in Ripon, Wisconsin which is home to Rippin’ Good Cookies. They make Carousel cookies which are frosted animal cookies topped with sprinkles. And they are soooo good. My homemade version soon to come!

The humble Oreo. Chocolate cookie and vanilla cream. Simple. Delicious. This week I decided to throw some in my food processor and add it to some buttercream. Best. Decision. Ever. I topped a chocolate cupcake with it and they were insanely good. Feel free to use your favorite chocolate cupcake recipe and whip up some Oreo Buttercream. You won’t regret it. My husband certainly didn’t regret eating some buttercream between two Oreos. True story.

Oreo Buttercream

1 cup unsalted butter, room temperature

3 cups powdered sugar

1 tsp vanilla extract

Pinch of salt

12-16 Oreos

2 Tbsp heavy cream

Pulse oreos in food processor till you have fine crumbs. In the bowl of a stand mixer, using the paddle attachment, whip butter till very pale and fluffy, about 7-8 minutes. Add the powdered sugar and vanilla and mix on low until combined. Add Oreo crumbs and mix until combined. Add heavy cream and mix on medium speed until light and fluffy again, scraping down the sides of the bowl as necessary.

Notes:

If you have very fine crumbs you can use an open star tip like I used. If your crumbs are larger you can use a large round tip or frost with an offset spatula.

Feel free to decorate with a mini Oreo like I did. Or more Oreo crumbs.

Whenever I make American buttercream I generally taste as I go. I don’t always use the listed amount of powdered sugar in a recipe. Especially if you’re adding additional sweet things like cookies.

I also don’t always use the listed amount of heavy cream. Sometimes you need more sometimes less. Start small. You can always add more. It’s harder to compensate when you’ve added too much of an ingredient. Trust me. I ruined a batch of Espresso buttercream by adding too much coffee and could not bring it back. I was not happy when I had to toss it. Learn from me. Wasting butter is not fun.
