Oops, I Did It Again

And no, I didn’t “accidentally” flash my goodies to the paparazzi.

The only things that follow me around are two dogs begging for food.

I have been on a cheesecake kick lately. These “kicks” happen generally when I try something new or different and I have some success with it. Last time the cheesecakes were pretty standard flavors: Strawberry, Raspberry and Oreo.

When my sister asked if I would mind making dessert for her turn hosting Bunco, (please don’t ask what that is or how to play, I have no idea!) I figured it was the perfect time to try out another flavor of cheesecake.

This time I did Strawberry again, however one of my co-workers was nice enough to give me a pint of her strawberry jam. So good! And I didn’t have to pick two flats of strawberries in 90 degree weather! Bonus! So I did a dozen of those.

For the second flavor I kicked around a couple different flavors but finally landed on peach. I’m not usually a peach person however, I have recently become addicted to the Murder She Baked movies on the Hallmark Movies and Mysteries channel. I have my sister to blame for that. I often mock her love of all things Hallmark. Then I’m blindsided one day while flipping through the channels and I see Alison Sweeney baking. What?!?! Cameron Mathison also stars and makes it even more enjoyable to watch. So now I have converted. I’m not as devout as my sister, but I have DVR’d almost all of the movies.

One of the movies is a peach cobbler mystery which is where I got my idea. Take the flavors of a homey peach cobbler and put them into a cool and classic cheesecake.

I put together a streusel topping and baked it. Once it was baked and cooled I threw it in my food processor and whizzed it till it resembled graham cracker crumbs. I took that and added a couple tablespoons of melted butter then put in a heaping teaspoon full in each of my cupcake liners. I baked the crusts for about 5 minutes.

For the cheesecake I subbed in a bit of brown sugar for the white sugar and added some cinnamon and ginger to the mix. After the base filling was finished mixing, I removed about a third of the mixture and folded peach preserves into it. I then put a little plain filling in each liner, topped with some peach filling and then the rest of the plain again on top. I dotted the tops with some more peach preserves and gently swirled with a toothpick.

They came out amazing. I also made some stabilized whipped cream to top them off because I LOVE whipped cream on everything. Then I piped some preserves on and sprinkled a little more streusel topping on them.

These little babies did not last long…
