More “Mini” Madness
I’ve had a busy couple of weeks. But, I wanted to stop by and show you something I worked on recently.
I love anything in mini form. Cupcakes, donuts, muffins, cookies, you name it, I adore it. I don’t have a rational explanation why. The only reason I can come up with is that mini things are just adorable. Far more adorable than full size things. Or king size for that matter. Not that I would turn down a king size candy bar or anything. (I totally wouldn’t.) Sometimes, I just want a little bite of something. Just a taste. And then I’m satisfied.
People always ask how I manage to not weigh a metric ton considering the amount of baking I do. Simple, I usually don’t eat the finished product. I’m always testing things as I go, so by the time I’m finished, I just don’t feel like eating anymore. Granted, there are a few exceptions to this rule. Leftover espresso buttercream? Yep, straight from the piping bag. I can’t help myself! It’s that good.
About a week ago, I made some mini cheesecakes for a graduation party. I’ve made cheesecakes in the past but they’ve always been full size ones. So take my love affair with all things mini and smoosh it together with delicious cheesecake. What do you get?
Mini Cheesecakes! In three varieties for your eating pleasure!!
Strawberry Cheesecakes with a Nilla Wafer Crust.
Oreo Cheesecake with an Oreo Cookie Crust (topped with chocolate ganache, whipped cream and a mini oreo, cuz why not?)
And, my favorite. Raspberry Cheesecakes.
Once again, I actually did not partake in the dessert eating. Which is okay. My favorite part is seeing the look on people’s faces when they eat something I’ve made. It’s the eyes rolling back in the head and the audible MMMMMM….. There’s nothing that makes me happier than making someone else happy with food!
