Absence Makes the Heart Grow Fonder

I must apologize for my recent absence. I’m sorry I haven’t brought you any sweet treats lately.

Life turned upside down recently and we are in the process of turning it right side up.

I don’t want to bore you with details but you do deserve an explanation. Long story short, our dog Lars had a corneal abrasion that ruptured. So he had surgery to remove his left eye.

Not gonna lie, driving 45 minutes to an emergency vet at 9:30 at night was not something I really had on my bucket list. Other dogs we’ve owned have had their fair share of injuries, however this was awful. I would have rather had an injury to my own eye.

Never fear though. Lars is just fine. He has been adjusting well. A little too good if you ask me. His two week follow up was on Tuesday and he had all but two sutures removed. He just can’t stop moving so it didn’t heal as fast as I would have liked. The last of the sutures come out Saturday and I’m hoping the fur comes back right around his eye. If not, oh well. I’m just glad he doesn’t notice he’s down one eye.

So, sappy story over now.

How adorable is this? My favorite bartender (yes, I have a favorite bartender, who doesn’t?) saw this on Pinterest and asked if I could make it. I accepted the challenge. Okay, these type of cakes aren’t really that challenging. It takes just a bit of planning. The party for her son was going to be small so she didn’t want standard size cupcakes. I finally got to pull out my mini cupcake pan and try it out! I thought it couldn’t get any cuter than cupcakes. Then I make minis and boom. My brain exploded from the cuteness.

The most impressive part? The fact that I could keep my hand steady enough to write out Happy Birthday Carson. This was so much fun to make. And of course I had leftover cupcakes. I frosted and decorated the leftovers and whipped out a mini egg carton I have been DYING to use.
